Delicious recipe:

Chicken & Rice Summer Salad

4 chicken breasts
1 box Uncle Ben's Wild Rice
1 can marinated artichoke hearts, drained & diced
8 oz. bag frozen peas, thawed
3 green onions, sliced
1 cup sliced almonds
salt and pepper
1/4 cup mayonnaise

Fry chicken and dice in small pieces. Cook rice and cool. Mix chicken, rice, peas, green onions, and artichokes together. Mix in mayonnaise. Add salt and pepper to taste.
Add almonds to top. Refrigerate 15 minutes.

Serves 5
